Garlic Recipes
Here are a couple of our favorite ways to use garlic. If you have never
baked garlic before, you might think it seems like a bit of an effort
to go to for such a small reward. Trust us, whole roasted garlic,
whether served as a dish on its own, or used within another recipe is
worth every second of the wait. Slow cooking brings out the
incredible flavor of the bulb.
Simple Roasted Garlic
2 medium heads garlic, broken into separate cloves, peeled
1/2 cup (about) olive oil
3 tablespoons unsalted butter
Preheat oven to 400°F. Place garlic in ramekin. Pour enough oil over to cover. Wrap ramekin in double
thickness of foil. Bake until garlic is very tender, about 35 minutes. Using slotted spoon, transfer garlic and 1
tablespoon cooking oil to food processor. Add butter to processor; puree. Season with salt and pepper.
Now you have a roasted garlic puree that can be used as a dressing, spread or dip.
Roasted Garlic Potatoes
Ingredients:
3 large baking potatoes, quartered
1 tablespoon minced garlic
2 teaspoons chopped fresh rosemary
2 tablespoons extra virgin olive oil
Sea salt and freshly ground pepper
Preheat oven to 350 degrees F.
Par boil the potato quarters for about four minutes. Remove from
boiling water and pat dry with paper towels. Make sure the potatoes are
completely dry before beginning the next step. This will ensure a
wonderful crisp, golden brown color when cooking. Cut each potato
quarter into thick wedges and arrange in greased shallow baking dish.
Combine garlic, rosemary, and olive oil and brush over potatoes.
Add a pinch of Hawaiian sea salt and ground black pepper. Be liberal
with the olive oil and toss the wedges once or twice during baking to
ensure full seasoning throughout.
Bake 45 minutes.
