JO'S ANSWER
The Beach House in poipu is usually very good and the location is spectacular.
Roy’s on Kauai is always a good bet – the service is excellent.
On Oahu, Roy’s have opened a great place at Ko’olina that’s hard to beat.
Within the Ihilani hotel there’s a very nice fine dining restaurant, Azul – it’s pricy and they do seem to have lost their focus in recent years, but it’s got fine dining appeal and atmosphere for sure.
